Crispy Brown Butter Gnocci Recipe + Kunde Wine Club

Brittany at Perpetually Daydreaming shared a Gnocchi recipe on Friday and it made me want to make one of my all-time favorite Gnocchi recipes. If you love Pasta & Brussels Sprouts as much as I do then you will enjoy this dish!

Ingredients:
10 ounces Fresh Gnocchi
8 ounces Brussels Sprouts
1 clove Garlic 
1 Lemon
1 Red Onion
1 bunch Thyme
3 tablespoons Butter
1/3 cup Grated Parmesan Cheese

Instructions:
One. Heat a medium pot of salted water to boiling. While the water is boiling, trim off and discard the root ends of the Brussels Sprouts. Pick off the bright green leaves until you reach the lighter cores; place the leaves in a small bowl and discard the cores.

Two. Using a peeler, remove the yellow rind of the lemon avoiding the white pith; mince the rind to get 2 teaspoons of zest. Quarter the lemon and remove the seeds.

Three. Peel and thinly slice the Onion. Peel and mince the Garlic. Pick the Thyme leaves off the stems; discard the stems and roughly chop the leaves.

Four. Add the Gnocchi to the pot of boiling water. Cook 2-3 minutes or until the Gnocchi floats to the top. Reserve 1/2 cup of the pasta cooking water. Drain the Gnocchi thoroughly and set aside.

Five. In a large pan, melt the butter on medium-high heat. Once melted, add the drained Gnocchi and cook for 2-4 minutes or until the Gnocchi are crisped and the butter is browned.

Six. Reduce the heat to medium, add the Garlic and Onion to the pan of crisped Gnocchi and browned butter; season with Salt and Pepper. Cook for 3-5 minutes or until the Onion has softened. 

Seven. To the pan of Gnocchi, add the Brussels Sprout leaves, Lemon zest, Thyme, the juice of 2 lemon wedges, half the Parmesan Cheese {save the rest for garnish} and 1/4 cup of pasta cooking water. Cook, stirring occasionally, for 1-2 minutes or until thoroughly mixed.

Eight. Remove from heat, season with Salt and Pepper to taste. Serve and garnish with remaining Parmesan Cheese. {We added a more Parmesan Cheese on top} 

I paired this pasta dish with a wine that we received from our Kunde Family Estate's Wine Club - 2013 Magnolia Lane Sauvignon Blanc. When I visited Napa & Sonoma last year with my Mom and Sister, this vineyard did not only have the most beautiful and breathtaking views but their wines were remarkable.   2. The gnocchi sounds delicious! I've never made it before, but I'm thinking that needs to change. Your wine country trip looks like it was a lot of fun! I actually have a friend who's going to run the the Napa-Sonoma half!
