Thoughts for Thursday: Summer Recipes

It's an exciting week in the Chalk Family so I'm anxiously waiting to kick-off the long weekend with our families. I'm counting the minutes until I can wrap my arms around my sister and her growing baby bump for the first time since December! Sister withdrawals are a real thing and have been in full effect recently. Later in the weekend, we are heading to the coast to meet and snuggle our beautiful niece that made her debut yesterday!

Today, I wanted to link up with Annie and Natalie for Thoughts For Thursday and share a couple of my favorite summer recipes now that the warmer temperatures have arrived here in NC.


A few years ago, Natalie from Designer Bags and Dirty Diapers shared this Corn Salad with her readers and I haven't stopped making it ever since. As soon as I see fresh corn in the grocery store, this salad is on my mind and on constant repeat until corn season ends. During the summer when our garden is packed full of fresh vegetables, I like to create salads that we can enjoy for a few days. 

Ingredients:
6 ears of Corn
1 pint of Cherry Tomatoes
4 Green Onions
1 Yellow Bell Pepper 
1 cup of Feta Cheese
1/4 cup of Olive Oil
3 tablespoons of Red Wine Vinegar
Salt & Pepper

Instructions:
ONE. Wash and dry the fresh produce. Slice the cherry tomatoes in half. Dice the bell pepper. Chop the green onions. Combine the tomatoes, peppers and onions in a large bowl.

TWO. Heat a large pot of water to a boil. Add the shucked corn and reduce the heat to medium-low. Let the corn simmer for 5-10 minutes or until tender. Once cooked, remove the corn from the water and place in a separate bowl to cool. 

THREE. Slice the corn off the cob and mix in the bowl with tomatoes, peppers and onions. Add 1 cup of Feta Cheese, 1/4 cup of olive oil, 3 tablespoons of red wine vinegar and salt & pepper to taste. Mix thoroughly and serve at room temperature.


I've started to notice that Blue Apron and Hello Fresh are making their way into many people's kitchens recently and I couldn't be more excited. You may be wondering why this makes me so happy and I'll gladly explain. But before I do, please know that this is not a sponsored post rather I wanted to share a few of my favorite summer dishes which included a recent recipe from the chefs at Blue Apron.

TC and I have been ordering Blue Apron consistently for the past 3 years and don't plan on stopping any time soon. The convenience of having planned meals that are fresh and perfectly portioned delivered to your doorstep is an obvious reason for why we enjoy it. To be honest though, that isn't why we continue to order every week. Preparing dinner has now become an activity that we look forward to doing together. We get to try recipes that are outside of our comfort zone, learn about new ingredients, and ways to pair different foods together.

The Spinach Pesto Gnocchi with Sauteed Asparagus and Brown Butter is a light pasta dish that will quickly cure your carb craving. The Spinach Pesto was easy to make yet full of flavor so if you love pasta as much as I do, you'll definitely enjoy this recipe. 
Ingredients: 
14 ounces of Gnocchi
4 ounces of Spinach
1 clove of Garlic
2 Tablespoons of Butter
1 Tablespoon of Capers
1 Tablespoon of Sliced Almonds
1/4 Cup of Parmesan Cheese
Olive Oil

Instructions:
ONE. Wash and dry the fresh produce. Finely chop the almonds and capers. Peel and mince the garlic and smash until it resembles a paste. Snap off and discard the tough, woody stem ends of the asparagus and cut into 1 inch pieces.

TWO. In a medium pan, heat 1 teaspoon of olive oil on medium-high heat until hot. Add the spinach and season with salt and pepper. Cook, stirring occasionally for 3 to 4 minutes or until wilted. Transfer to a strainer and release as much liquid as possible by pressing down on the cooked spinach. Transfer the drained spinach to a cutting board and finely chop. 

THREE. Combine the chopped spinach with the almonds, capers, garlic paste and half of the Parmesan cheese. Slowly stir in enough olive oil to create a rough paste. Season with salt and pepper to taste.

FOUR. Heat a medium pot of salted water to a boil. Add the gnocchi to the pot of boiling water and cook for 2 to 3 minutes or until the gnocchi float to the top of the pot. Reserving 1/2 cup of the gnoochi cooking water then drain thoroughly.

FIVE. In the same pan that you used to cook the spinach, heat the butter on medium-high until melted. Add the cooked gnocchi and asparagus; season with salt and pepper. Cook for 2-4 minutes or until the gnocchi are lightly browned and the asparagus has softened. 

SIX. Transfer the browned gnocchi and cooked asparagus to the bowl of pesto. Add half the gnocchi cooking water and stir to thoroughly combine. If the sauce seems dry, gradually add the remaining gnocchi cooking water to achieve your desired consistency. 

SEVEN. Divide the finished gnocchi between 2 dishes and enjoy!


Thoughts for Thursday: December Highlights

As I slowly begin to take down the Christmas decorations scattered throughout our home, I wanted to take a moment to share a few of our December Highlights with you. I still can't believe that one of my favorite seasons has passed and we are about to ring in the New Year, does anyone else feel like this year flew by?! The past 31 days have been filled with joy, love and laughter. It has been a month of special memories and festive activities, if only I could hit rewind so we could do it all over again.

ONE. Getting dressed up to take our Christmas Card pictures.
TWO. This view and Football Sunday with my Dad.
THREE. Beers and BBQ with my sister and her husband.
FOUR. Squeezing my best friend after months of being 430 miles apart from each other.
FIVE. An evening at the Ballet, The Nutcracker did not disappoint.
SIX. 80 degrees in December and spending Christmas in Morehead City.
SEVEN. And one last Christmas tree picture. I love my MOL's white flocked Christmas Tree.
 

Thoughts for Thursday

After having last week off {our company closes all of our offices in the US for a week twice a year}, I thought this week was going to creep by very slowly. To my surprise, it has actually been the complete opposite and I am not complaining one bit because we are off to The Greenbrier Resort with TC's family this weekend!

I am still not ready to admit that 4th of July has already passed and we are half way through the summer. Is anyone else struggling to admit this too? We have hosted a 4th of July party for the past 3 years at our home and it has quickly become an event that TC and I look forward to each summer. This year we had a packed house of friends and 2 new additions - my adorable Goddaughter and another friend of ours also has a 2 month old, little girl. They are precious!
You know that adorable Goddaughter that I just mentioned? I seriously can't handle how cute she is in her red, white and blue to match her sweet mom. I feel like I am the luckiest lady to be able to be such a special part of E's life.  
Even though it poured in the afternoon, the skies cleared as everyone started to arrive {thank goodness} so we could enjoy being outside. The guys spent a lot of time seeing what they could find in the pond - some actually caught a few fish but others only caught sticks and weeds. :)
What's a 4th of July celebration without red, white, and blue, a few festive cocktails and a lot of traditional American food?! I made the Sangria that I mentioned in this post and it was delicious! I had never made Sangria before so I was worried that it wouldn't turn out well but it did and was the perfect cocktail for the afternoon - light and refreshing. 
 
A few weekends ago, we traveled to DC to meet my sister and her husband. We had such a great time catching up and enjoying all the sites of the city together. A few of my favorite stops during the trip...

The Observatory is a rooftop bar located on top of the Graham hotel in Georgetown, it has the most spectacular panoramic views of DC and Virginia. Their hand-crafted cocktails and wine selection were amazing!

We ate dinner at Restaurant Nora which was by far one of the greatest meals that I've had recently. Nora is focused on providing organic, seasonal, local food that is full of flavor so the menu changes daily. I thought it was neat to hear that Restaurant Nora became the nation's first certified organic restaurant, which means that at least 95% of all ingredients must be produced by certified organic farmers, growers and suppliers.  

After we walked up and down the cobble streets in Georgetown, we stopped for a cocktail and a cheese & charcuterie plate at Martin's Tavern in Georgetown. Martin's Tavern is one of the few restaurants that has been around since the Great Depression and the tradition of hospitality has brought every President from Harry S. Truman to George W. Bush to their tavern. By the way, I hope you are enjoying all the fun {and random} facts that I'm sharing from our travels.

Thoughts for Thursday: Travel Addition

This week I have been traveling for work so I am sure you have noticed that it has been a little quiet around here. Ever since I touched down in Denver on Monday morning, I have been on the go. A few flights later and I am now enjoying a cup of coffee in the hotel lobby before I begin my day with our interns in Wichita, Kansas.

The weather in Colorado was absolutely beautiful, the crisp air and 70 degree days were perfect for all the outdoor activities that we had planned for our interns. I snapped this picture as I was leaving the office, wishing this was my view every day! :)
Our office is in Boulder, Colorado which is about 40 minutes northwest of Denver. Boulder is a quaint town that has an amazing food scene that many describe as being "hip and contemporary." When I am in town, I try to go to restaurants that I haven't tried in the past and this trip was no exception. I ventured to Oak at Fourteenth and SALT, both had been recommended by locals so I knew they were not going to disappoint...and they didn't at all.  
Quinoa Strawberry Salad, Tomato Braised Meatballs and a glass of Rose from Oak at Fourteenth. 
Tom's Tavern Burger with hand cut fries and homemade ketchup (yum!) from SALT. You get to create your own cocktails based on your "personalized flavor formulation," which was really neat. The house-infused simple syrup that I selected was blood orange rosemary to be mixed with vodka and served as "cocktail style." Oh, it was heavenly!

Speaking of travel, if you have recently flown on a Delta flight then you may have seen these safety videos being played instead of the Flight Attendant rehearsing their safety script. It is entertaining, you can watch it here.

This has been my go-to travel outfit recently because it's guaranteed that I will be sweating one minute and then freezing cold the next. I have loved the Ruffneck Jersey Dress by Gretchen Scott. It is the perfect dress because it has three quarter length sleeves, doesn't wrinkle and is very comfortable.

You will typically find Raleigh on a list as one of the best places to live, start a family, or begin a career but you usually won't find us being voted as having one of the "coolest bars that someone has ever been to." Don't get me wrong, I love the restaurants and night life in Raleigh but to try to compete with the likes of New York City, Boston, LA, etc. is pretty tough. But...WE DID IT!

I can't stop smiling! Watching this video was a beautiful reminder that love has no labels. We should love each other {always} and not be so quick to judge each other.

I don't have children yet but I look forward to the moment when I become a Mother. To be honest though, I have already started to think about how I would balance my career and being a Mother. Katharine Zaleski reminds women that we don't have to sacrifice either one.

I have been doing a lot of Spring cleaning recently and looks like I will be doing a lot more after reading through this list. :)

Thoughts For Thursday

Just one more day until the weekend, hooray!

I am counting down the minutes until I see my sweet sister tomorrow! She will be in Raleigh all weekend for her Bridal Shower on Saturday. I can't wait to wrap my arms around her when she gets off the airplane.

My beautiful bridal party was featured on Amsale Bridesmaids yesterday! It was such a wonderful surprise. Don't they all look beautiful?!

Last weekend, we hosted a Couple's Baby Shower for our dear friends, Kristin and AJ. I am still indulging in these delicious cookies from Sweet Memories Bakery in Apex. I'll be sharing all the details this weekend so stop back by.

I just ordered this dress from Pipelime that I featured on yesterday's post for a Wedding Shower in Nashville for my sister and her fiance next month. Speaking of Nashville, do you have any restaurant recommendations? I would love to hear them!
